Come explore delicious and meatless ways to create an Italian dinner. We will prepare torta di zucchini, diced, sautéed zucchini, mixed with eggs, Parmigiano, then baked. An omelet with caramelized onions and cheese, frittata di cipolle, served on a bed of greens will be our next dish. We will then prepare tortino di maccheroni, penne pasta in tomato sauce with basil, eggs, Parmigino and fresh, diced mozzarella, covered with bread crumbs and baked.
