Rustic Italian Cooking: Summer Salads

Make the most of the season's bountiful harvest into Italian summer salads. Our first salad will be caponata sorrentina, a mixed salad made with toasted bread, diced tomatoes, sliced onions, green sweet olives, mixed pickles, vegetables and fresh basil. A traditional Insalata Cesare, with homemade dressing and diced grilled chicken will follow. For our last salad we will create insalata di mare, a seafood salad made with octopus, calamari rings, and mussels in a lemon vinaigrette dressing.
