
Come have a taste of northern Italy with bologna-style roasted pork butt with vegetables. The Pork butt will first be pan-seared, then oven-roasted with mixed vegetables, chicken broth, and white wine. We will make a sauce pureed from the roasted vegetables along with Italian-style macaroni and cheese. We will use sharp cheeses, crispy pancetta and top it with coarse bread crumbs and baked. We’ll also create a seasonal salad or vegetable and apricot tart topped with crumbled Amaretti cookies.
