Roma: Amatriciana sauce; this is made with diced pancetta, red onions, fresh tomatoes and white wine.
Emilia Romagna: Bolognese; The traditional ragu of Emilia Romagna.
Made with pork and veal, sautéed vegetables, tomato puree, red wine, and finished with heavy cream. All the sauces will be served with pasta and a salad."
