Ravioli 2 ways. First way; Duck meat braised in white wine and herbs then used to fill the ravioli. This will be topped in a white cream sauce and truffle oil. Second way: Ravioli filled with sage, parmigiano cheese and sautéed diced chicken breast. This will be served with tomato basil sauce and topped with parmigiano cheese. A seasonal vegetable and accompany. Pinolata, a tart filled with patisserie cream then baked and topped with pine nuts.
